Chia Pudding is such a fresh way to begin your day! It’s light, yet filling. And as well as being delicious, it’s also a great little immune booster with the spices we use for this particular bowl of goodness.

Recipe by:

Ingredients:

  • ¼ cup chia seeds
  • 1 Tbsp cinnamon
  • 1 ½ tsp cardamom
  • ½ tsp clove
  • ½ tsp nutmeg
  • 1 tsp grated ginger (optional)
  • 1 tsp vanilla
  • 1 – 1 ½ cups almond milk or water (depends on how hydrated you like your chia)

Okay, a confession – it’s not actually cheese! But it’s chees-y and tasty, and trust me when I say you won’t actually miss the queso one iota.

  • 2-3 cups of potatoes cubed
  • 2 cup carrots sliced
  • 2 onions diced
  • 3-5 cloves of garlic minced
  • 1/4 cup nutritional yeast
  • 1 tbsp fresh thyme or rosemary
  • 1-2 containers of vegetable broth or water
  • 1-2 tsp salt
  • 1-2 tsp pepper
  • 2 heads of broccoli chopped small
  • dash of soy sauce

The Secret Beach That’s Only A Beach Sometimes – Playa Arco

On one of the days in between our training intensives, we decided to explore Playa Arco, one of the many beaches nearby. The difference with this beach is that it’s only accessible at low tide. As in, there’s only a beach there at low tide.

It also has a cave to explore, if the “private” beach that joins directly with rainforest isn’t enough for you. Check out the video below to see the beauty (but you’ll have to visit to feel it!):

To clearly define what it is we are doing, exactly: we are attempting to open business bank accounts with Banco Nacional in Costa Rica after having opened a business here in August last year. I am an Australian Citizen and Canadian Permanent Resident, and my last 6 months have been working on opening this account for the business. The first 4 months by distance, the last 2 being here in the country.
